Name: Baked Broccoli and Greens Pasta
Yield: Makes 4-6 servings
Ingredients: 1 pound dry rigatoni, cooked according to the package directions; 4 cups finely chopped spinach, chard, or a mixture; 4 cups chopped broccoli or broccolini; 1 teaspoon salt; 1 teaspoon sugar; 1/2 cup each, minced: dill, parsley, and green onions or some combination to equal approximately 1 ½ cups; 1 ½ cups unsweetened, plain nondairy yogurt; 1 cup vegetable broth; ¼ cup olive oil; ¼ cup nutritional yeast or your favorite vegan cheese; 2 tablespoons lemon juice; 6 cloves of garlic, minced; 1 tablespoon ume plum vinegar or ½ teaspoon salt; ½ teaspoon ground white pepper
