Ingredients: 2-3 delicata squash, deseeded, skin on, and chopped into half moons*; 1 red onion, cut into thin slices; 1 tablespoon maple syrup; 1 tablespoon olive oil; ½ teaspoon five spice powder**; ¼ teaspoon salt; Soup; 2 cups sliced leeks, about 1 large leek; 1 tablespoon minced fresh ginger; 5 cloves of garlic, minced; ½ teaspoon red pepper flakes, optional but encouraged; ⅛ teaspoon five spice powder**; 2 large sprigs of sage, about 10 leaves total; 2 bay leaves; 10 cups vegetable broth or your favorite no-chicken broth; ½ pound of your favorite dried pasta like gemilli or shells (half a box); 1 ½ cups cooked cannellini or other white bean or 1 can, rinsed; 3-4 cups chopped kale or other hearty green; ½ cup chopped cilantro or watercress; ¼ teaspoon freshly ground nutmeg; Salt & Pepper
