Ingredients: 1 ½ cups chickpea flour; 1 tablespoon Herbes de Provence*; 2 teaspoon garlic powder, divided; ½ teaspoon salt; 1 ½ cups vegetable broth or water; 2 fist-sized yellow or yukon gold potatoes, sliced as thinly as possible; 2 tablespoons olive oil; Pinch of salt; ¼ cup thinly sliced shallots or red onion; Toppings: lemon juice, chopped chives
