California Citrus and Almond Salad

1 big ass salad, enough for 4-6 people

Ingredients
Dressing
3 tablespoons rice vinegar
2 tablespoons toasted sesame oil
2 teaspoons minced fresh ginger
1 teaspoon maple syrup or your favorite liquid sweetener
1 bunch of raw kale cut into strips, about 4 cups
½ teaspoon salt
1 small head of romaine, cut into strips, about 4 cups
¾ cup green onions, sliced, about 3 stems of those guys
¼ cup chopped cilantro
2 cups of oranges slices, about 2 oranges
1 cup toasted, sliced almonds
1 avocado, sliced
Directions
First make the dressing: throw those ingredients in a cup and stir that shit until it's all combined. Put that in the fridge until it’s go time.
Put the kale in a big ass bowl and sprinkle it with the salt. Now get in there with your hands and just massage that around for about a minute. The salt is gonna help break down the kale a little so that fibrous fucker isn’t so tough to chew.
Add the romaine, green onions, and cilantro. Drizzle in the dressing and toss until everything looks all coated. Fold in the orange slices, almonds, avocado if you’re using it and then taste. Add more vinegar, cilantro, almonds, whatever the fuck you think it needs then serve immediately.
